March 13
3 Squares Diner, 303 E. Oakridge Drive
Score: 76, Grade: C
Violations: Observed employees beverage cups not stored in a designated area separated from food preparation and serving area. Employee disposed of the cups. Corrected On-Site. New Violation. Observed food not protected from cross contamination (ready-to-eat food baked potatoes stored on the shelf with raw eggs). PIC arranged the raw foods according to cooking temperatures and placed ready to eat foods on the top shelf. Corrected On-Site. New Violation. Observed Temperature Control Safety foods (tomatoes, eggs, and cheesecake being held above 41 degrees Fahrenheit. New Violation. Observed ice scoop not in a clean protected location when not in use. Observed the ware washing machine temperature measuring device that indicates the temperature of the water not reaching 125 degrees Fahrenheit. Violations: Observed employee not wearing a hair restraint. Employee was observed putting on a hair net. Corrected On-Site. New Violation. Observed the dumpster missing a drain plug. The person in charge will have the drain plug replaced. New Violation.

Violations: Observed the fume hood needs to be cleaned. Discuss frequency of cleaning with the person in charge. Repeat Violation. Observed the fruit and vegetable sink being used to thaw shrimp. PIC remove the shrimp from the fruit and vegetable sink. New Violation. Observed utensils being stacked wet after sanitizing. Discussed how to stack wet utensils with the person in charge.
